3 large egg whites
1 lb. confectioner's sugar
1/2 teaspoon cream of tartar
Beat egg whites with cream of tartar to soft peak stage.
Add confectioners sugar, a little at a time, beating continuously until the consistency of marshmallow and peaks stand alone.
If I need them to dry quickly, I'll add in about a half tsp. of meringue powder and half a tsp. of lemon juice.
